My sweet mother came to visit a week ago, and while here she finally taught me how to make lasagna. Yes, I admit, I have never made lasagna before; It just didn't seem worth the effort to me (call me lazy). My mom's secret to a quicker lasagna?  she never cooks the noodles before hand. Who knew?

The other secret to its amazing tastiness? spinach. When I was little, it was the only way that I enjoyed spinach and I used to hate it! My mom sure was tricky. The best part about it is that you don't even realize that there is no meat in it. It's that good.

 So here's to the best vegetarian and spinach lasagna you'll ever eat!

And here is my beautiful mother hard at work. I love it when she cooks. 
Spinach Lasagna

Main Ingredients:
2 cups of spinach
1 can of olives sliced or crushed
lasagna noodles (uncooked - well you can cook them if you want, but you really don't need to)
16 oz can of spaghetti sauce (you might need a second can)
1 1/2 cups of shredded mozzarella (for the top)

Cottage Cheese mixture:
cottage cheese
4 uncooked scrabbled eggs
shredded Parmesan
1 cup shredded mozzarella
2 tbs Italian seasonings
1 tbs parsley
dash of pepper and salt

1st layer: noodles first
2nd layer: Tomato sauce - cover the noodles liberally
3rd layer: Spinach - at least two layers of spinach
4th layer: cottage cheese mixture
5th layer: sliced olives
- Repeat layers once
- Lastly add one more layer of noodles and sauce. Then finish with a thin or thick (what ever you prefer) of delicious mozzarella.

Cover with foil and back at 325 degrees for 1 hr.
