Pinterest Recipes Tried and LOVED

For the past few months, I've been tired of old recipes so I've decided to actually try a new recipe from Pinterest every month. However, sometimes those recipes that look so enticing, and that have been re-pinned million of times, really aren't that good. So here are the few that I've come across that have been tried and tested and loved by me and the hubby. 

Easy Slow-Cooker Jambalaya Recipe

I've never really had real Jambalaya before, so I'm not a really good person to tell you how authentic this recipe is, but we thought it tasted good authentic or not. It was easy to put together and delicious. The only thing that I did different was omit the celery (because we didn't have any) and the shrimp. 

I give this recipe 3 1/2 stars
Crockpot Shredded Chicken Tacos - 3 1/2 Stars
Dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts & a jar of salsa in the crockpot, stir and cook on high(4-6 hrs.) or low(6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings!
I tested this recipe on our wonderful missionaries, and well besides the fact that they eat anything provided for them, they still loved it. Brigg thought it was pretty good too. I usually don't stray from my standard Chicken and beans crockpot fajitas (I'll have to post that recipe sometime), but I thought I'd try something new and it was pretty easy. Unfortunately, the link to the recipe is broken, but here is the basics of the recipe:

Shredded Crockpot Chicken Tacos
Combine in crockpot the following:
4-6 boneless, skinless chicken breast
a jar of salsa (small to medium size - depending on how much chicken you cook)

stir and cook on high 4-6 hours or low 6-8 hours. Once done, shred chicken and serve with your favorite taco/faijata toppings. 

I really like this recipe because you can change the flavor depending on the salsa you get. Also, super easy and yummy chicken 

Lasagna Soup Five Stars

This was pretty amazing. I was nervous about this recipe at first, it sounded amazing but it also sounded risky. Basically I thought "yum, lasagna in soup form" but also thought "gross, soupy lasagna?" Conflicting emotions. However, we were very happy out the deliciousness of this soup. I didn't quite feel like I was eating Lasagna soup however, but that didn't matter to me because it was SO GOOD. And the hubby, who doesn't love soup like I do, that it was pretty amazing. So 5 stars for this one. 

Lemon Orzo Salad with Asparagus, Spinach, and Feta

I actually made this last fall when it was still summery and warm outside, but it has stuck with us as a favorite. It was my first time making orzo and we really liked it. The lemon, orzo, asparagus and spinach were a perfect combination together to make a satisfying and a healthy meal. Definitely 4 stars for this recipe.
