Peanut Butter Snack Balls

I've discovered a new and delicious snack: peanut butter balls. Seriously so good! They're super easy to make and just a little bit of honey to sweeten it up (well plus a few chocolate chips if you feel like it, which we always do). My boys love them and they are full of healthy and delicious ingredients. And did I mention they are quick and easy?

Peanut Butter Snack Balls Recipe
 Ingredients:

1/2 cup  peanut butter
1/4 cup + 2 Tbsp honey
1 tsp vanilla extract
3 Tbsp unsweetened cocoa powder Up to 4 tsp warm water, as needed
1 cup old fashioned oats (raw) 3/4 cup toasted or raw coconut (I used sweetened)
1/2 cup flaxseed meal
6 Tbsp semi­sweet chocolate chips

 Directions:
 In a mixing bowl, stir together almond butter, honey, vanilla and cocoa powder. If mixture seems too thick stir in 2 tsp warm water to thin. Add oats, coconut, flaxseed meal and chocolate chips and stir until evenly coated. At this point if mixture still doesn't stick well, stir in up to 2 tsp water as needed. Transfer mixture to refrigerator or freezer and chill until nearly set and easier to handle. Remove from refrigerator and shape into 1­inch balls. Store in refrigerator in an airtight container

  1. Is there some alternative that can be used instead of flaxseed meal?

    1. you can leave the flaxseed meal can be replaced with almond meal or just leave it out all together.

  2. Those do sound like a great treat! I'm grain-free but I think I've seen something similar with coconut flakes instead of oats. I bet the peanut butter is a great binder as well as flavor!
